What is the Italian name for the small pasta that has to be cooked JUST right or else the whole dish is ruined

Could it be cous-cous? I tried that one time and I don't think I prepared it properly. It's sort of like grits. They can come out too stiff and lumpy.

"Risotto" is made with 'riso' (rice) and itsn't a pasta !!!


I don't realize how it had been possible somebody has understood you were looking for this "seed" or "fruit" of a plant...!!!


Pasta is a totally different thing.

Reply:Um, risotto is rice and not pasta but okay. Also, all Italians eat their pasta "al dente" and not overcooked.

Reply:any kind of pasta noodles you work with has to be "al-dente"which means firm or the dishes you make with it will be ruined.You do not want to stir the noodles too much because they will turn mushy and really messy.
