What is the name of this italian recipe and where can i find it?

My aunt always made this italian appetizer or dish...





They where rice balls with ground beef in the middle and bread


crumbs on the outside. She is a true italian so any ideas help!!?? Im clueless...

Arancini





INGREDIENTS








3陆 cups (875ml) chicken stock


40g butter


1 small onion, finely chopped


1陆cups (300g) arborio rice


陆 cup (125ml) dry white wine


1/3 cup (25g) grated parmesan, plus 1 tablespoon extra


2 eggs


1 tablespoon olive oil


60g button mushrooms, finely chopped


1 garlic clove, crushed


200g lean beef mince


录 cup chopped parsley


1 cup (70g) fresh breadcrumbs


rice bran oil, to deep-fry














METHOD








1. First make risotto by heating chicken stock in a saucepan, until simmering. Keep hot. Melt butter in a large saucepan on medium heat. Add onion and cook for 3 minutes, stirring, until softened. Add rice and stir for 1 minute, until translucent. Add wine and stir until evaporated.





2. Add one ladle of stock, stirring constantly, until absorbed. Repeat with remaining stock, one ladle at a time, stirring constantly for 15-20 minutes, until all stock is added and rice is cooked. Remove from heat and stir through parmesan and one lightly beaten egg. Season to taste. Spread rice onto a baking tray lined with baking paper to cool completely.





3. Meanwhile, heat olive oil in a frying pan on high. Cook mushroom and garlic, stirring, for 5 minutes. Add mince and cook for 5 minutes, until browned and moisture evaporates. Stir in parsley, remaining egg and extra parmesan.





4. Divide cooled risotto into 12 portions. With wet hands, take one portion in your palm and make a small well in centre to form a cup. Place 1 tablespoon of mince mixture in centre of rice. Fold over rice to enclose mixture and shape into a ball. Repeat with remaining rice portions and mince mixture. Roll balls in breadcrumbs and set aside.





5. Heat rice bran oil in a large saucepan on high until a cube of bread sizzles on contact. Deep-fry rice balls in batches for 4 minutes, turning, until golden. Drain on paper towel and serve immediately.





suppli are simular but not the same. suppli, or fried rice balls are usually just that, fried rice balls, no meat filling. When they have a cube of mozzarella put in the middle they are called suppli telefono which means telephone rice balls because the cheese strings out like a telephone cord
Reply:They are called "arancini di riso" (rice oranges) because of their shape, and the fried breadcrumbs on the outside make them look orangish..


They can be filled with anything... yours happened to be meat, but you can find them with ham, peas, cheese, etc.

Reply:They are called "suppl矛", and are usually made from leftover risotto. They are delicious when made with a chunk of mozzarella cheese in the center...
